Ingredients

  • 1 lb salmon fillets, cut into bite-sized pieces
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a bowl, mix the mayonnaise, sweet chili sauce, sriracha, garlic powder, onion powder, salt, and pepper to create the Bang Bang sauce.
  2. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  3. Dip each salmon piece first in flour, then in the egg, and finally coat with panko breadcrumbs.
  4. Heat oil in a frying pan over medium heat.
  5. Fry the salmon bites in batches until golden brown and crispy, about 3-4 minutes per side.
  6. Remove from the pan and drain on paper towels.
  7. Serve warm with the Bang Bang sauce for dipping.

Notes

  • For extra flavor, marinate the salmon in a mixture of soy sauce and lime juice for 30 minutes before breading.
  • Adjust the spiciness of the sauce by adding more or less sriracha.
  • These bites can also be baked in the oven at 400°F for a healthier option.
