Description

  • 1/2 cup all-purpose flour
  • 1 large egg
  • 2 tablespoons milk
  • 3/4 cup panko breadcrumbs
  • 1/2 cup finely grated Asiago cheese, plus 2 tablespoons for garnish
  • 2 tablespoons finely grated Parmesan cheese (optional)
  • Garlic powder, onion powder, smoked paprika, black pepper, and fine sea salt to taste
  • 2 tablespoons olive oil or cooking spray
  • Lemon wedges for serving
  • Fresh chopped parsley or chives for garnish
  • Dipping sauce of choice (aioli, lemon-garlic yogurt sauce, or marinara)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the asparagus by rinsing under cold water and patting dry. Trim the woody ends.
  3. Set up a dredging station with three shallow bowls: flour in the first, whisked egg and milk in the second, and a mixture of panko breadcrumb, grated cheese, and spices in the third.
  4. Coat each asparagus spear in flour, dip in egg, and roll in the panko mixture.
  5. Arrange the coated spears in a single layer on a baking sheet.
  6. Drizzle with olive oil or spritz with cooking spray.
  7. Bake for 10 to 14 minutes, turning halfway through until golden brown.
  8. Broil for an additional 1 to 2 minutes for extra crunch, watching closely.
  9. Finishing touches include sprinkling with remaining cheese and garnish with parsley or chives.
