- 8 oz fettuccine pasta
- 1 lb salmon fillet
- 1 cup asparagus, trimmed and cut into 2-inch pieces
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the fettuccine pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the salmon fillet and cook for about 4-5 minutes on each side, or until cooked through. Remove from skillet and flake into pieces.
- In the same skillet, add minced garlic and asparagus. Sauté for 3-4 minutes until asparagus is tender.
- Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth.
- Add the cooked pasta and flaked salmon to the skillet. Toss to combine and heat through.
- Season with salt and pepper to taste. Serve garnished with fresh parsley.
Notes
- For a lighter version, substitute heavy cream with half-and-half.
- Feel free to add other vegetables like cherry tomatoes or spinach.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
