Ingredients

  • 8 oz fettuccine pasta
  • 1 lb salmon fillet
  • 1 cup asparagus, trimmed and cut into 2-inch pieces
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the fettuccine pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the salmon fillet and cook for about 4-5 minutes on each side, or until cooked through. Remove from skillet and flake into pieces.
  3. In the same skillet, add minced garlic and asparagus. Sauté for 3-4 minutes until asparagus is tender.
  4. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth.
  5. Add the cooked pasta and flaked salmon to the skillet. Toss to combine and heat through.
  6. Season with salt and pepper to taste. Serve garnished with fresh parsley.

Notes

  • For a lighter version, substitute heavy cream with half-and-half.
  • Feel free to add other vegetables like cherry tomatoes or spinach.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
