Ingredients

  • 1 head of garlic
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the top off the head of garlic, drizzle with olive oil, and wrap in foil.
  3. Roast the garlic in the oven for 30-35 minutes until soft.
  4. In a saucepan, combine heavy cream, roasted garlic (squeezed out of the skins), lemon zest, and lemon juice.
  5. Heat over medium heat, stirring until well combined.
  6. Add Parmesan cheese, salt, and pepper, and stir until the cheese is melted and the sauce is creamy.
  7. Serve over your favorite pasta and garnish with fresh parsley.
