Ingredients

- 1 head of garlic
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 lemon, zested and juiced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the top off the head of garlic, drizzle with olive oil, and wrap in foil.
- Roast the garlic in the oven for 30-35 minutes until soft.
- In a saucepan, combine heavy cream, roasted garlic (squeezed out of the skins), lemon zest, and lemon juice.
- Heat over medium heat, stirring until well combined.
- Add Parmesan cheese, salt, and pepper, and stir until the cheese is melted and the sauce is creamy.
- Serve over your favorite pasta and garnish with fresh parsley.
Notes
- For a lighter version, substitute heavy cream with half-and-half or a plant-based cream.
- This sauce pairs well with fettuccine or penne pasta.
