- 2 packs of ramen noodles
- 1 cup kimchi, chopped
- 1 cup pork belly, sliced
- 2 cups chicken broth
- 1 cup coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 green onions, chopped
- 1 tablespoon gochujang (Korean chili paste)
- Salt and pepper to taste
Instructions
- In a pot, heat sesame oil over medium heat and add the sliced pork belly. Cook until crispy and golden brown.
- Remove the pork and set aside. In the same pot, add kimchi and sauté for a few minutes.
- Add chicken broth, coconut milk, soy sauce, and gochujang to the pot. Stir well and bring to a simmer.
- Add ramen noodles to the pot and cook according to package instructions.
- Once the noodles are cooked, serve in bowls topped with crispy pork and chopped green onions.
- Season with salt and pepper to taste before serving.
Notes
- For a vegetarian option, substitute pork with tofu.
- Adjust the spiciness by adding more or less gochujang.
- Feel free to add additional toppings like soft-boiled eggs or seaweed.
