Ingredients

  • 2 packs of ramen noodles
  • 1 cup kimchi, chopped
  • 1 cup pork belly, sliced
  • 2 cups chicken broth
  • 1 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, chopped
  • 1 tablespoon gochujang (Korean chili paste)
  • Salt and pepper to taste

Instructions

  1. In a pot, heat sesame oil over medium heat and add the sliced pork belly. Cook until crispy and golden brown.
  2. Remove the pork and set aside. In the same pot, add kimchi and sauté for a few minutes.
  3. Add chicken broth, coconut milk, soy sauce, and gochujang to the pot. Stir well and bring to a simmer.
  4. Add ramen noodles to the pot and cook according to package instructions.
  5. Once the noodles are cooked, serve in bowls topped with crispy pork and chopped green onions.
  6. Season with salt and pepper to taste before serving.

Notes

  • For a vegetarian option, substitute pork with tofu.
  • Adjust the spiciness by adding more or less gochujang.
