- 1 cup sliced mushrooms (Cremini or button)
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 tablespoon olive oil
- Salt and pepper to taste
- Pasta, rice, or mashed potatoes for serving
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken breasts with salt and pepper on both sides and cook until golden brown, about 6-7 minutes per side.
- Remove chicken from the skillet and set aside.
- Add minced garlic and sliced mushrooms to the same skillet and cook until mushrooms are tender, about 5 minutes.
- Pour in heavy cream and bring to a simmer.
- Add fresh spinach and cook until wilted.
- Return chicken to the skillet and coat with the sauce.
- Serve over pasta, rice, or mashed potatoes, spooning extra sauce over the top.
