Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup sliced mushrooms (Cremini or button)
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Pasta, rice, or mashed potatoes for serving

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken breasts with salt and pepper on both sides and cook until golden brown, about 6-7 minutes per side.
  3. Remove chicken from the skillet and set aside.
  4. Add minced garlic and sliced mushrooms to the same skillet and cook until mushrooms are tender, about 5 minutes.
  5. Pour in heavy cream and bring to a simmer.
  6. Add fresh spinach and cook until wilted.
  7. Return chicken to the skillet and coat with the sauce.
  8. Serve over pasta, rice, or mashed potatoes, spooning extra sauce over the top.
