Ingredients

  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh cranberries, chopped
  • 1 tablespoon orange zest
  • 1/2 cup orange juice
  • 1/2 cup vegetable oil
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. Stir in the chopped cranberries and orange zest.
  4. In another bowl, whisk together the orange juice, vegetable oil, and eggs.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For a sweeter bread, you can add more sugar to taste.
  • Feel free to substitute dried cranberries if fresh ones are not available.
