Instructions
- Preheat the oven to 350°F (175°C).
- In a medium-sized bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream the softened butter and granulated sugar with an electric mixer until light and fluffy, about 2-3 minutes.
- Beat in the egg, vanilla extract, and buttermilk until well blended.
- Gradually add the dry ingredients to the wet ingredients and stir gently until just combined.
- Divide the dough in half and color one half pink and the other half blue with gel food coloring.
- Use a cookie scoop to form even-sized balls, pairing one pink and one blue ball together.
- Transfer cookie balls onto parchment-lined baking sheets, spaced 2 inches apart, and bake for 10-12 minutes.
- Allow cookies to cool on the baking sheets for a few minutes before transferring to wire racks.
