Description

A delightful Coconut Lime Poke Cake infused with zesty lime and sweet coconut, perfect for any occasion.


Ingredients

  • 1 Box Vanilla Cake Mix
  • 3 Large Eggs
  • 1 Cup Water
  • 1 Can (14 ounces) Sweetened Condensed Milk
  • 1/4 Cup Fresh Lime Juice
  • 1 Teaspoon Lime Zest
  • 1 Cup Whipped Topping
  • 1 Cup Shredded Coconut

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Combine the cake mix, eggs, and water in a large mixing bowl until smooth.
  3. Pour the batter into the prepared pan and bake according to package instructions until a toothpick comes out clean.
  4. Remove the cake from the oven and let it cool for a few minutes before poking holes in it with a fork.
  5. Mix together the sweetened condensed milk, lime juice, and lime zest.
  6. Pour the mixture over the warm cake, allowing it to seep into the holes.
  7. Let the cake cool completely in the pan.
  8. Spread whipped topping over the cooled cake and sprinkle with shredded coconut.
  9. Chill in the refrigerator for a couple of hours before serving.
