Ingredients

  • 2 cups ramen noodles
  • 4 cups chicken broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Separate the egg whites from the yolks and beat the whites until stiff peaks form.
  3. Fold in a pinch of salt and spoon the mixture onto a baking sheet lined with parchment paper.
  4. Create small wells in the center of the egg whites and place the yolks in the wells.

  6. Meanwhile, cook the ramen noodles according to package instructions and set aside.
  7. In a pot, bring the chicken broth to a simmer and add the spinach, mushrooms, and soy sauce.
  8. Once the vegetables are tender, add the cooked ramen noodles to the broth.
  9. Serve the ramen in bowls, topped with the cloud eggs and garnished with chopped green onions.
