- 2 large eggs
- 2 cups ramen noodles
- 4 cups chicken broth
- 1 cup spinach
- 1/2 cup sliced mushrooms
- 1 green onion, chopped
- 1 tablespoon soy sauce

Instructions
- Preheat the oven to 375°F (190°C).
- Separate the egg whites from the yolks and beat the whites until stiff peaks form.
- Fold in a pinch of salt and spoon the mixture onto a baking sheet lined with parchment paper.
- Create small wells in the center of the egg whites and place the yolks in the wells.
- Bake for 10-12 minutes until the egg whites are set and slightly golden.
- Meanwhile, cook the ramen noodles according to package instructions and set aside.
- In a pot, bring the chicken broth to a simmer and add the spinach, mushrooms, and soy sauce.
- Once the vegetables are tender, add the cooked ramen noodles to the broth.
- Serve the ramen in bowls, topped with the cloud eggs and garnished with chopped green onions.
