Ingredients

- 2 cups jicama, julienned
- 2 cups green cabbage, shredded
- 1 cup carrots, shredded
- 1/2 cup red bell pepper, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 tablespoon honey or agave syrup
- Salt and pepper to taste
Instructions
- In a large bowl, combine the jicama, cabbage, carrots, red bell pepper, and cilantro.
- In a separate small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper.
- Pour the dressing over the slaw and toss to combine.
- Let the slaw sit for at least 15 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.
Notes
- This slaw can be made a few hours in advance for better flavor.
- Feel free to add other vegetables like radishes or green onions for extra crunch.
