- zest of 1 lemon
- zest of 1 orange
- 200g mixed berries (strawberries, blueberries, raspberries)
- 2 tbsp lemon juice
- 2 tbsp sugar (for berry compote)
Instructions
- Preheat the oven to 220°C (428°F).
- In a large bowl, beat the cream cheese and sugar until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the heavy cream, vanilla extract, lemon zest, and orange zest until fully combined.
- Pour the mixture into a lined springform pan.
- Bake for 50-60 minutes until the top is dark brown and the center is slightly jiggly.
- While the cheesecake cools, prepare the berry compote by cooking the mixed berries, lemon juice, and sugar in a saucepan over medium heat until the berries break down.
- Let the compote cool before serving.
- Serve the cheesecake chilled, topped with the berry compote.
