- 1/2 cup granulated sugar

- 1 egg white
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the egg white and vanilla extract until frothy.
- Add the mixed nuts to the bowl and stir until they are well coated.
- In a separate bowl, mix the sugar, cinnamon, and salt.
- Sprinkle the cinnamon sugar mixture over the nuts and stir until evenly coated.
- Spread the nuts in a single layer on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, stirring occasionally, until golden brown.
- Remove from the oven and let cool before serving.
