Ingredients

  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1 cup warm water
  • 1/4 cup olive oil
  • 1 tablespoon cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, whisk together the flour, yeast, sugar, and salt until well combined.
  2. Gradually add in warm water and olive oil. Stir with a wooden spoon until a shaggy dough forms.
  3. Transfer the dough to a floured surface and knead it for about 10 minutes until smooth and elastic.
  4. Place the dough in the bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1 hour.
  5. Preheat your oven to 375°F (190°C).
  6. On a lightly floured surface, roll the dough into a large rectangle about 1/4 inch thick.
  7. Sprinkle cinnamon and brown sugar evenly across the surface, then roll the dough tightly into a log.
  8. Place the rolled log in a greased 9×13-inch baking dish, tucking the ends underneath. Let it rise for another 30 minutes.
  9. Bake for 20-25 minutes, or until golden brown.
  10. While it bakes, whisk together powdered sugar, milk, and vanilla for the glaze.
  11. Once the focaccia cools slightly, drizzle the glaze over the top.
