Description

  • 2 large eggs

  • ½ teaspoon salt
  • ½ cup brown sugar
  • 1 cup cream cheese, softened
  • 2 cups powdered sugar
  • 2 tablespoons milk (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the milk and vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, cinnamon, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. In a small bowl, mix the brown sugar and cinnamon together for the filling.
  8. Fill each cupcake liner halfway with batter, sprinkle a teaspoon of the brown sugar mixture on top, then cover with more batter until the liners are about ¾ full.
  9. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  10. Let the cupcakes cool completely before frosting.
  11. For the frosting, beat the cream cheese and powdered sugar together, adding milk as needed for desired consistency.
  12. Frost the cooled cupcakes and enjoy!
