- 4 medium sweet potatoes, peeled and cubed

- 1/4 cup maple syrup

Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the cubed sweet potatoes, olive oil, maple syrup, cinnamon, salt, and pepper.
- Toss until the sweet potatoes are evenly coated.
- Spread the sweet potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until tender and caramelized, stirring halfway through.
- Remove from the oven and let cool slightly before serving.
Notes
- For extra flavor, add a pinch of nutmeg or ginger.
- These can be served warm or at room temperature.
