- 2 (8 oz) packages cream cheese, softened

- 3 large eggs
- 1 teaspoon ground cinnamon
- ½ cup sour cream
- ½ cup heavy cream
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press the mixture into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and vanilla, mixing until well combined.
- Add eggs one at a time, mixing well after each addition. Stir in cinnamon, sour cream, and heavy cream until smooth.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set but slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Refrigerate for at least 4 hours or overnight before serving.
Notes
- For a stronger churro flavor, add more cinnamon to the batter.
- Serve with a drizzle of chocolate or caramel sauce for extra sweetness.
