Ingredients

  • 1 cup white chocolate, melted
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • Whipped cream for topping
  • White chocolate shavings for garnish

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese until smooth. Add melted white chocolate and sugar, mixing until well combined.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream.
  5. Pour the cheesecake mixture over the crust in the springform pan.
  6. Bake for 50-60 minutes or until the center is set but slightly jiggly.
  7. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  8. Refrigerate for at least 4 hours or overnight before serving.
  9. Top with whipped cream and white chocolate shavings before serving.
