- 500g Bread Flour
- 200g Sourdough Starter
- 300ml Water
- 50g Cocoa Powder
- 100g Sugar
- 10g Salt
- 100g Dark Chocolate, Chopped
- 30g Butter (optional)
Instructions
- Mix the bread flour, cocoa powder, and sugar until well combined.
- Combine the sourdough starter and water in another bowl, mixing until dissolved.
- Add the wet ingredients to the dry and stir until a shaggy mass forms.
- Sprinkle the salt over the mixture and incorporate until rough dough forms.
- Knead the dough on a floured surface for 10-15 minutes until smooth and elastic.
- Incorporate the chopped dark chocolate into the dough and fold gently.
- Form the dough into a ball and place in a greased bowl, covering with a damp cloth. Let it rise for 4-6 hours until doubled in size.
- Preheat the oven to 450°F (230°C).
- Shape the risen dough and place in a proofing basket or on a baking sheet.
- Let it rise again for about an hour.
- Score the top of the loaf just before baking.
- Bake for 30-35 minutes until deep brown and internal temperature reaches 200°F (93°C).
- Cool on a wire rack before slicing.

For best flavor, allow dough to rise for an adequate time and consider using room temperature water. Customize ingredients like using whole wheat flour or different chocolates.
