- 2 limes (juiced)

- 1 cup corn (canned or frozen)
- 1 cup black beans (canned, rinsed and drained)
- 1 avocado (sliced)
- 1 cup cherry tomatoes (halved)
- 1/4 cup fresh cilantro (chopped)
Instructions
- In a bowl, mix chili powder, cumin, lime juice, olive oil, salt, and pepper to create a marinade.
- Marinate the flank steak in the mixture for at least 30 minutes.
- Preheat a grill or skillet over medium-high heat.
- Cook the marinated steak for about 5-7 minutes on each side, or until desired doneness.
- Let the steak rest for a few minutes before slicing it thinly.
- In bowls, layer cooked rice, corn, black beans, sliced steak, avocado, cherry tomatoes, and cilantro.
- Drizzle with additional lime juice if desired and serve immediately.
Notes
- For a spicier kick, add diced jalapeños to the bowls.
