  • 1 cup black beans (canned, rinsed and drained)
  • 1 avocado (sliced)

  • 1/4 cup fresh cilantro (chopped)

Instructions

  1. In a bowl, mix chili powder, cumin, lime juice, olive oil, salt, and pepper to create a marinade.
  2. Marinate the flank steak in the mixture for at least 30 minutes.
  3. Preheat a grill or skillet over medium-high heat.
  4. Cook the marinated steak for about 5-7 minutes on each side, or until desired doneness.
  5. Let the steak rest for a few minutes before slicing it thinly.
  6. In bowls, layer cooked rice, corn, black beans, sliced steak, avocado, cherry tomatoes, and cilantro.
