- 1 can chickpeas, drained and rinsed
- 2 cups fresh spinach, chopped
- 1/2 cup breadcrumbs
- 1/4 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg, beaten
- 1 cup plain yogurt
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mash the chickpeas with a fork or potato masher.
- Add the chopped spinach, breadcrumbs, onion, garlic, cumin, salt, pepper, and beaten egg to the mashed chickpeas. Mix well.
- Form the mixture into small patties and place them on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, flipping halfway through, until golden brown.
- In a separate bowl, mix the yogurt, lemon juice, and dill to create the yogurt sauce.
- Serve the patties warm with the yogurt sauce on the side.
Notes
- For a vegan option, replace the egg with a flax egg or omit it entirely.
- These patties can be frozen before baking for a quick meal later.
