Description

  • 2 cups cooked chicken, shredded
  • 1 can (10 ounces) Rotel tomatoes, drained
  • 1 cup cottage cheese
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup chopped parsley (optional for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook spaghetti according to package instructions; drain and set aside.
  3. In a large bowl, combine shredded chicken, Rotel tomatoes, cottage cheese, sour cream, garlic powder, onion powder, salt, and pepper. Mix until smooth and creamy.
  4. Stir in the cooked spaghetti until well mixed.
  5. Pour half of the mixture into a greased 9×13 inch baking dish. Press down gently to create an even layer.
  6. Sprinkle half of the cheddar and mozzarella cheese on top.
  7. Layer the remaining spaghetti mixture and top with the remaining cheese.
  8. Bake in the preheated oven for 25-30 minutes or until bubbly and golden on top.
  9. Garnish with chopped parsley before serving.
