- 2 cups cooked chicken, shredded
- 1 can (10 ounces) Rotel tomatoes, drained
- 1 cup cottage cheese
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/4 cup chopped parsley (optional for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook spaghetti according to package instructions; drain and set aside.
- In a large bowl, combine shredded chicken, Rotel tomatoes, cottage cheese, sour cream, garlic powder, onion powder, salt, and pepper. Mix until smooth and creamy.
- Stir in the cooked spaghetti until well mixed.
- Pour half of the mixture into a greased 9×13 inch baking dish. Press down gently to create an even layer.
- Sprinkle half of the cheddar and mozzarella cheese on top.
- Layer the remaining spaghetti mixture and top with the remaining cheese.
- Bake in the preheated oven for 25-30 minutes or until bubbly and golden on top.
- Garnish with chopped parsley before serving.
