Description

A delicious and heartwarming Chicken Avocado Melt Sandwich that combines juicy grilled chicken, creamy avocado, and gooey cheese between crispy bread.


Ingredients

  • 2 Boneless, skinless chicken breasts
  • 1 ripe Avocado
  • 1 cup shredded Cheese (cheddar and mozzarella blend)
  • 4 slices of Bread (whole grain, ciabatta, or sourdough)
  • Salt and Pepper to taste
  • 2 tablespoons Butter

Instructions

  1. Grill the chicken: Heat your grill over medium-high heat. Season chicken breasts with salt and pepper. Grill until cooked through, about 6-8 minutes per side. Remove and allow to rest before slicing.
  2. Prepare the avocado: Cut the avocado in half, remove the pit, and scoop into a bowl. Mash with a fork and season with salt and pepper.
  3. Heat the skillet: Place a skillet over medium heat and butter one side of each slice of bread.
  4. Assemble the sandwich: Place one slice of bread butter side down in the skillet. Layer sliced grilled chicken, mashed avocado, and cheese.
  5. Add the top slice: Place another slice of bread on top, butter side up, and gently press down.
  6. Grill to perfection: Grill until the bottom is golden brown, about 3-4 minutes. Flip and grill until cheese melts and the other side is browned.
  7. Slice and serve warm: Remove from skillet, slice in half, and enjoy immediately.
