- 2 Boneless, skinless chicken breasts
- 1 ripe Avocado
- 1 cup shredded Cheese (cheddar and mozzarella blend)
- 4 slices of Bread (whole grain, ciabatta, or sourdough)
- Salt and Pepper to taste
- 2 tablespoons Butter
Instructions
- Grill the chicken: Heat your grill over medium-high heat. Season chicken breasts with salt and pepper. Grill until cooked through, about 6-8 minutes per side. Remove and allow to rest before slicing.
- Prepare the avocado: Cut the avocado in half, remove the pit, and scoop into a bowl. Mash with a fork and season with salt and pepper.
- Heat the skillet: Place a skillet over medium heat and butter one side of each slice of bread.
- Assemble the sandwich: Place one slice of bread butter side down in the skillet. Layer sliced grilled chicken, mashed avocado, and cheese.
- Add the top slice: Place another slice of bread on top, butter side up, and gently press down.
- Grill to perfection: Grill until the bottom is golden brown, about 3-4 minutes. Flip and grill until cheese melts and the other side is browned.
- Slice and serve warm: Remove from skillet, slice in half, and enjoy immediately.
Notes
Use a meat thermometer to ensure chicken is cooked through. Feel free to experiment with different types of bread for added flavor.
