- 1 lb smoked sausage, sliced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup shredded cheddar cheese
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- In a large skillet, cook the sliced smoked sausage over medium heat until browned.
- Add the chopped onion, bell pepper, and garlic; sauté until the vegetables are tender.
- Stir in the rice, chicken broth, paprika, salt, and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked.
- Remove from heat and stir in the shredded cheddar cheese until melted.
- Serve hot and enjoy!
