Ingredients

- 2 lbs potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1 cup milk
- 4 large eggs
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup cooked bacon or sausage (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the diced potatoes, onion, bell pepper, garlic powder, salt, and pepper.
- In another bowl, whisk together the eggs and milk.
- Layer half of the potato mixture in a greased baking dish.
- Pour half of the egg mixture over the potatoes, then sprinkle with half of the cheese.
- Repeat the layers with the remaining potatoes, egg mixture, and cheese.
- If using, add the cooked bacon or sausage on top.
- Bake for 45-50 minutes, or until the potatoes are tender and the top is golden brown.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add your favorite vegetables or meats to customize the casserole.
- This dish can be prepared the night before and baked in the morning.
- Leftovers can be stored in the refrigerator for up to 3 days.
