- 1 medium head of cauliflower, riced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup breadcrumbs (or almond flour for a low-carb option)
- 1 large egg
- 1/4 cup green onions, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Rice the cauliflower using a food processor or box grater until it resembles fine grains.
- Steam the riced cauliflower for about 5 minutes until tender, then let it cool.
- In a large bowl, combine the cooled cauliflower, cheese, breadcrumbs, egg, green onions, garlic powder, onion powder, salt, and pepper.
- Mix until well combined and form small tot shapes with the mixture.
- Place the tots on the prepared baking sheet and bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
Notes
- For a spicier version, add red pepper flakes to the mixture.
- These tots can be frozen before baking for a quick snack later.
- Serve with your favorite dipping sauce for added flavor.
