Ingredients

  • 1 medium head of cauliflower, riced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup breadcrumbs (or almond flour for a low-carb option)
  • 1 large egg
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Rice the cauliflower using a food processor or box grater until it resembles fine grains.
  3. Steam the riced cauliflower for about 5 minutes until tender, then let it cool.
  4. In a large bowl, combine the cooled cauliflower, cheese, breadcrumbs, egg, green onions, garlic powder, onion powder, salt, and pepper.
  5. Mix until well combined and form small tot shapes with the mixture.
  6. Place the tots on the prepared baking sheet and bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  7. Remove from the oven and let cool slightly before serving.

Notes

  • For a spicier version, add red pepper flakes to the mixture.
