Caribbean Chicken and Rice is a vibrant and flavorful dish that combines tender chicken with aromatic spices and colorful vegetables, served over a bed of fluffy rice.

- 2 cups of long-grain rice
- 1 lb of chicken thighs, boneless and skinless
- 1 can (15 oz) of coconut milk
- 1 cup of chicken broth
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 teaspoon of thyme
- 1 teaspoon of paprika
- 1 teaspoon of allspice
- Salt and pepper to taste
- 2 tablespoons of olive oil
- 1 lime, juiced
- Fresh cilantro for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
- Add the chicken thighs to the pot and brown on all sides.
- Stir in the bell pepper, thyme, paprika, and allspice, cooking for another 2 minutes.
- Add the rice, coconut milk, chicken broth, lime juice, salt, and pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes or until the rice is cooked and liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
- Garnish with fresh cilantro before serving.
Notes
- For extra flavor, marinate the chicken in lime juice and spices for a few hours before cooking.
- Feel free to add other vegetables like peas or corn for added nutrition.
- This dish can be made in advance and reheated for a quick meal.
