Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup frozen peas
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat some oil over medium heat and sauté the onion, bell pepper, and garlic until softened.
  3. Add the rice and Cajun seasoning, stirring to coat the rice.
  4. Pour in the chicken broth and diced tomatoes, and bring to a simmer.
  5. Season the chicken breasts with salt and pepper, then place them on top of the rice mixture.
  6. Cover the skillet with a lid or aluminum foil and bake in the preheated oven for 25-30 minutes.
  7. Remove the cover, add the frozen peas, and bake for an additional 10 minutes or until the chicken is cooked through and the rice is tender.
  8. Let it rest for a few minutes before serving.
