- 4 boneless, skinless chicken breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 cup frozen peas
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large oven-safe skillet, heat some oil over medium heat and sauté the onion, bell pepper, and garlic until softened.
- Add the rice and Cajun seasoning, stirring to coat the rice.
- Pour in the chicken broth and diced tomatoes, and bring to a simmer.
- Season the chicken breasts with salt and pepper, then place them on top of the rice mixture.
- Cover the skillet with a lid or aluminum foil and bake in the preheated oven for 25-30 minutes.
- Remove the cover, add the frozen peas, and bake for an additional 10 minutes or until the chicken is cooked through and the rice is tender.
- Let it rest for a few minutes before serving.
Notes
- Feel free to adjust the amount of Cajun seasoning to your taste.
- This dish can be made with brown rice, but cooking time may vary.
