Instructions
- Warm the oil in a large pot over medium heat until it shimmers.
- Cook the chicken with Cajun seasoning, salt, and pepper for about 5-7 minutes until golden brown.
- Set aside the chicken, leaving flavorful bits in the pot.
- Sauté the onions and garlic for 2-3 minutes until fragrant, then add the bell pepper.
- Add the orzo, chicken broth, and heavy cream; bring to a gentle boil.
- Simmer for 10-12 minutes until orzo is tender and has absorbed most liquid.
- Combine the cooked chicken and Parmesan cheese; stir well.
- Serve in bowls, garnished with parsley if desired.
