Description

Buffalo Chicken Stuffed Potatoes are a delicious and hearty dish that combines the flavors of buffalo chicken with the comforting texture of baked potatoes.


Ingredients

  • 4 large russet potatoes
  • 2 cups shredded cooked chicken
  • 1/2 cup buffalo sauce
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake for 45-60 minutes until tender.
  3. In a bowl, mix the shredded chicken, buffalo sauce, cream cheese, and half of the cheddar cheese.
  4. Once the potatoes are done, cut them in half and scoop out some of the flesh, leaving a border.
  5. Mix the scooped potato flesh with the buffalo chicken mixture, then refill the potato skins.
  6. Top with the remaining cheddar cheese and green onions.
  7. Bake for an additional 10-15 minutes until the cheese is melted and bubbly.

Notes

  • For extra flavor, add blue cheese crumbles on top before serving.
  • These can be made ahead of time and reheated in the oven.
