Buffalo Chicken Stuffed Potatoes are a delicious and hearty dish that combines the flavors of buffalo chicken with the comforting texture of baked potatoes.

- 4 large russet potatoes
- 2 cups shredded cooked chicken
- 1/2 cup buffalo sauce
- 1/2 cup cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then bake for 45-60 minutes until tender.
- In a bowl, mix the shredded chicken, buffalo sauce, cream cheese, and half of the cheddar cheese.
- Once the potatoes are done, cut them in half and scoop out some of the flesh, leaving a border.
- Mix the scooped potato flesh with the buffalo chicken mixture, then refill the potato skins.
- Top with the remaining cheddar cheese and green onions.
- Bake for an additional 10-15 minutes until the cheese is melted and bubbly.
Notes
- For extra flavor, add blue cheese crumbles on top before serving.
- These can be made ahead of time and reheated in the oven.
- Adjust the amount of buffalo sauce to your spice preference.
