Ingredients

  • 4 large eggs

  • 1/4 cup chopped onions
  • Salt and pepper to taste
  • Cooking spray or oil for frying

Instructions

  1. In a skillet, heat a small amount of oil over medium heat.
  2. Whisk the eggs in a bowl and season with salt and pepper.
  3. Add the diced bell peppers and onions to the skillet and sauté until softened.
  4. Pour the eggs into the skillet and scramble until fully cooked.
  5. Remove the egg mixture from the skillet and set aside.
  6. Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
  7. Add half of the egg mixture and any optional sausage or bacon on top of the cheese.
  8. Fold the tortilla over and cook until golden brown on both sides, about 2-3 minutes per side.
  9. Repeat with the remaining tortillas and filling.
  10. Cut into wedges and serve warm.
