- 4 large flour tortillas
- 4 large eggs
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup cooked and crumbled sausage or bacon (optional)
- 1/2 cup diced bell peppers
- 1/4 cup chopped onions
- Salt and pepper to taste
- Cooking spray or oil for frying
Instructions
- In a skillet, heat a small amount of oil over medium heat.
- Whisk the eggs in a bowl and season with salt and pepper.
- Add the diced bell peppers and onions to the skillet and sauté until softened.
- Pour the eggs into the skillet and scramble until fully cooked.
- Remove the egg mixture from the skillet and set aside.
- Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
- Add half of the egg mixture and any optional sausage or bacon on top of the cheese.
- Fold the tortilla over and cook until golden brown on both sides, about 2-3 minutes per side.
- Repeat with the remaining tortillas and filling.
- Cut into wedges and serve warm.
Notes
- Feel free to customize the fillings with your favorite ingredients such as spinach, mushrooms, or avocado.
- Serve with salsa, sour cream, or guacamole for added flavor.
