Description

Ingredients

  • Boneless chicken thighs or drumsticks
  • 1 can full-fat coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 bell pepper, diced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, heat oil over medium heat. Sauté chopped onion, garlic, and ginger until softened, about 3-4 minutes.
  2. Increase heat and add chicken pieces, cooking until golden brown on all sides.
  3. Add diced bell pepper, cumin, paprika, salt, and pepper. Stir for about 2 minutes until fragrant.
  4. Pour in coconut milk, scraping any bits from the skillet. Bring to a simmer.
  5. Reduce heat and let simmer for 20-30 minutes until chicken is tender and sauce thickens.
  6. Stir in lime juice just before serving.
  7. Serve hot, garnished with fresh cilantro.

Notes

Make ahead and refrigerate to deepen flavors. Can be reheated gently on the stovetop.
