- Boneless chicken thighs or drumsticks
- 1 can full-fat coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch fresh ginger, grated
- 1 bell pepper, diced
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Juice of 1 lime
- Fresh cilantro for garnish
Instructions
- In a large skillet, heat oil over medium heat. Sauté chopped onion, garlic, and ginger until softened, about 3-4 minutes.
- Increase heat and add chicken pieces, cooking until golden brown on all sides.
- Add diced bell pepper, cumin, paprika, salt, and pepper. Stir for about 2 minutes until fragrant.
- Pour in coconut milk, scraping any bits from the skillet. Bring to a simmer.
- Reduce heat and let simmer for 20-30 minutes until chicken is tender and sauce thickens.
- Stir in lime juice just before serving.
- Serve hot, garnished with fresh cilantro.
