Description

Ingredients

  • 2 medium carrots, grated
  • 1 cup sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cocoa powder
  • 1 cup milk
  • Chocolate frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour your cake pan.
  2. In a blender, combine grated carrots, sugar, vegetable oil, and eggs. Blend until smooth.
  3. In a large bowl, whisk together flour, baking powder, salt, and cocoa powder.
  4. Pour the carrot mixture into the bowl with dry ingredients and mix gently.
  5. Gradually add the milk while stirring until the batter is smooth.
  6. Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick comes out clean.
  7. Let the cake cool in the pan for 10 minutes before transferring to a wire rack. Frost with chocolate frosting once cooled.

Notes
