Ingredients

  • 1 pound breakfast sausage
  • 2 cups pancake mix
  • 1 1/2 cups milk
  • 3 large eggs
  • 1 cup fresh blueberries
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the breakfast sausage over medium heat until browned. Drain excess fat.
  3. In a large bowl, mix pancake mix, milk, eggs, maple syrup, vanilla extract, and cinnamon until smooth.
  4. Fold in the cooked sausage and blueberries gently.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  7. Let it cool for a few minutes before serving.

Notes

  • For a sweeter casserole, add more maple syrup.
  • Can substitute blueberries with other berries if desired.
  • Serve with additional maple syrup on top.
