Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
  2. Cream the softened butter and powdered sugar together until light and fluffy, about 3-5 minutes.
  3. Add both the vanilla and almond extracts, blending until smooth.
  4. Incorporate the all-purpose flour, finely chopped almonds, and salt until just combined.
  5. Take about a tablespoon of dough, flatten it, and place a small spoonful of blueberry preserves in the center.
  6. Fold the dough over the filling and roll it into a ball.
  7. Arrange the cookie balls on the baking sheet with space between each.
  8. Bake for 12-15 minutes or until the edges turn lightly golden.
