Deliciously creamy cheesecake bars with a delightful blackberry swirl and a crunchy pistachio crust.
Ingredients

- 1 cup pistachios, shelled
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup fresh blackberries
- 2 tbsp lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- In a food processor, blend the pistachios and sugar until finely ground.
- Add the melted butter and pulse until combined.
- Press the mixture into the bottom of a greased 9×9 inch baking pan.
- In a mixing bowl, beat the cream cheese and sugar until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and lemon juice.
- Pour the cream cheese mixture over the crust.
- In a small bowl, mash the blackberries and swirl them into the cheesecake mixture.
- Bake for 30-35 minutes or until set.
- Let cool, then refrigerate for at least 2 hours before cutting into bars.
Notes
- For a sweeter taste, add more sugar to the blackberry mixture.
- These bars can be stored in the refrigerator for up to 5 days.
- Feel free to substitute other berries if desired.
