Description

A comforting and hearty turkey noodle soup filled with tender turkey, fresh vegetables, and chewy egg noodles, perfect for cold days and family gatherings.

Ingredients

Scale
  • 2 cups cooked turkey, shredded
  • 8 oz egg noodles
  • 4 cups chicken broth
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté until the vegetables soften and the onion turns translucent, stirring occasionally, for about 5 minutes.
  2. Stir in the minced garlic and thyme, allowing them to cook until fragrant, about 1 minute.
  3. Pour in the chicken broth and bring it to a gentle boil.
  4. Toss in the egg noodles, cooking as directed on the package until tender.
  5. Gently fold in the shredded turkey, mixing until warmed through. Season with salt and pepper to taste.
  6. Allow the soup to simmer for an additional 5 minutes.
  7. Ladle the soup into bowls and serve hot.

Notes

Make-ahead tips: Prepare the broth and vegetables a day ahead. Cooking alternatives: Use a slow cooker for a deep flavor.
