Description

A refreshing tomato sandwich celebrating the flavors of summer with ripe tomatoes and a creamy herb spread.

Ingredients

Scale
  • 2 ounces cream cheese, at room temperature
  • 1 tablespoon low-fat plain strained (Greek-style) yogurt
  • 1 tablespoon sliced fresh chives
  • 1 tablespoon chopped fresh dill
  • ¼ teaspoon ground pepper
  • 2 slices whole-wheat sandwich bread, lightly toasted
  • 4 slices tomato (about 1/4-inch thick)

Instructions

  1. Blend the room temperature cream cheese and low-fat Greek yogurt in a small bowl until smooth.
  2. Mix in the sliced chives, chopped dill, and ground pepper until combined.
  3. Toast your whole-wheat bread in the toaster until golden but still soft.
  4. Spread the creamy mixture generously on one side of each slice of bread.
  5. Arrange the tomato slices atop one slice of the spread to allow juices to seep into the cream cheese.
  6. Top with the second slice of bread, spread-side down, to form the sandwich.
  7. Cut the sandwich in half diagonally and enjoy immediately.

Notes

For best flavor, use ripe, in-season tomatoes and serve immediately for optimal freshness. Consider adding layers of avocado or crispy bacon for extra flavor.
