Description
A refreshing tomato sandwich celebrating the flavors of summer with ripe tomatoes and a creamy herb spread.
Ingredients
Scale
- 2 ounces cream cheese, at room temperature
- 1 tablespoon low-fat plain strained (Greek-style) yogurt
- 1 tablespoon sliced fresh chives
- 1 tablespoon chopped fresh dill
- ¼ teaspoon ground pepper
- 2 slices whole-wheat sandwich bread, lightly toasted
- 4 slices tomato (about 1/4-inch thick)
Instructions
- Blend the room temperature cream cheese and low-fat Greek yogurt in a small bowl until smooth.
- Mix in the sliced chives, chopped dill, and ground pepper until combined.
- Toast your whole-wheat bread in the toaster until golden but still soft.
- Spread the creamy mixture generously on one side of each slice of bread.
- Arrange the tomato slices atop one slice of the spread to allow juices to seep into the cream cheese.
- Top with the second slice of bread, spread-side down, to form the sandwich.
- Cut the sandwich in half diagonally and enjoy immediately.
Notes
For best flavor, use ripe, in-season tomatoes and serve immediately for optimal freshness. Consider adding layers of avocado or crispy bacon for extra flavor.
