Ingredients

  • 1.2 lbs (≈550 g) pork tenderloin
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 1/2 cup (120 ml) chicken broth
  • 1/2 cup (120 ml) heavy cream
  • 2 tbsp Dijon mustard
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)

Instructions

  1. Pat the pork tenderloin dry with paper towels and season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the pork on all sides until golden brown, about 3–4 minutes per side. Remove and let it rest.
  3. In the same skillet, sauté garlic and shallot for 1–2 minutes until fragrant.
  4. Pour in chicken broth, scraping the bottom of the pan to release browned bits, and let it simmer for 2–3 minutes.
  5. Reduce heat to low, stir in heavy cream, Dijon mustard, and thyme. Simmer gently for 3–4 minutes until sauce thickens.
  6. Return the pork to the skillet, spoon sauce over it, and simmer for another 5–7 minutes until the internal temperature reaches 145°F (63°C).
  7. Slice the tenderloin, pour the sauce over the top, and serve immediately.

Notes

Allow the pork to rest after cooking to retain its juices. You can make the sauce in advance and reheat it before serving.
