Ingredients

Instructions

  1. Preheat the oven to 400°F (200°C) and roast the beets until tender, about 45 minutes.
  2. Once cooled, peel and dice the beets.
  3. In a large bowl, combine the diced beets, cucumber, feta cheese, and dill.
  4. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine.
