- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup frozen corn
- 1 packet taco seasoning
- 3 cups tater tots
- 1 cup shredded cheese (cheddar or Mexican blend)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned.
- Stir in black beans, diced tomatoes, corn, and taco seasoning. Cook for 5 minutes until heated through.
- Spread tater tots evenly over the beef mixture in the skillet.
- Bake in the preheated oven for 25-30 minutes, or until tater tots are golden brown and crispy.
- Remove from oven and sprinkle cheese on top. Return to oven for an additional 5 minutes until cheese is melted.
- Serve hot and enjoy!

- Feel free to add your favorite vegetables to the skillet.
- For a spicier version, add jalapeños or hot sauce.
