Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup frozen corn
  • 1 packet taco seasoning
  • 3 cups tater tots
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned.
  3. Stir in black beans, diced tomatoes, corn, and taco seasoning. Cook for 5 minutes until heated through.
  4. Spread tater tots evenly over the beef mixture in the skillet.
  5. Bake in the preheated oven for 25-30 minutes, or until tater tots are golden brown and crispy.
  6. Remove from oven and sprinkle cheese on top. Return to oven for an additional 5 minutes until cheese is melted.
  7. Serve hot and enjoy!
