A refreshing and vibrant salad featuring grilled BBQ tofu and juicy watermelon, perfect for summer gatherings.
Ingredients

- 1 block firm tofu, pressed and drained
- 2 cups watermelon, cubed
- 1 tablespoon olive oil
- 1/4 cup BBQ sauce
- 2 cups mixed greens
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled (optional)
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Cut the tofu into slices and marinate in BBQ sauce for at least 30 minutes.
- Grill the tofu slices for about 5-7 minutes on each side until charred.
- In a large bowl, combine mixed greens, watermelon, and red onion.
- Add the grilled tofu on top of the salad.
- Drizzle with olive oil and additional BBQ sauce if desired.
- Top with feta cheese if using, and season with salt and pepper.
- Serve immediately and enjoy!
Notes
- For a vegan option, omit the feta cheese.
- Feel free to add other vegetables like cucumber or bell peppers.
