BBQ Tofu & Watermelon Salad: A Refreshing Delight!

Ingredients

  • 1 block firm tofu, pressed and drained
  • 2 cups watermelon, cubed
  • 1 tablespoon olive oil
  • 1/4 cup BBQ sauce
  • 2 cups mixed greens
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Cut the tofu into slices and marinate in BBQ sauce for at least 30 minutes.
  3. Grill the tofu slices for about 5-7 minutes on each side until charred.
  4. In a large bowl, combine mixed greens, watermelon, and red onion.
  5. Add the grilled tofu on top of the salad.
  6. Drizzle with olive oil and additional BBQ sauce if desired.
  7. Top with feta cheese if using, and season with salt and pepper.
  8. Serve immediately and enjoy!

Notes

  • For a vegan option, omit the feta cheese.
  • Feel free to add other vegetables like cucumber or bell peppers.
