Ingredients

  • 2 medium sweet potatoes, diced
  • 1 lb chicken breast, cooked and shredded
  • 1 cup BBQ sauce
  • 1 cup corn, canned or frozen
  • 1 cup black beans, rinsed and drained
  • 1 avocado, sliced
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with olive oil, salt, and pepper, and spread them on a baking sheet.
  3. Bake the sweet potatoes for 25-30 minutes or until tender.
  4. In a bowl, mix the shredded chicken with BBQ sauce until well coated.
