- 1 cup BBQ sauce
- 1 cup shredded cheddar cheese
- 4 large tortillas

- 1/2 cup diced red onion
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- In a bowl, mix the shredded chicken with BBQ sauce until well coated.
- Heat olive oil in a skillet over medium heat.
- Add diced red onion and sauté until translucent.
- Place a tortilla in the skillet and layer with BBQ chicken mixture and shredded cheddar cheese.
- Fold the tortilla in half and cook until the cheese is melted and the tortilla is golden brown, about 2-3 minutes per side.
- Remove from skillet, slice in half, and garnish with chopped cilantro if desired.
Notes
- Feel free to use leftover rotisserie chicken for a quicker option.
