- 1 cup flour
- 1 cup panko breadcrumbs
- 2 eggs, beaten
- 1 cup mayonnaise

- 1 tablespoon sriracha
- 2 cups mixed greens
- 1 cup shredded carrots
- 1 cup sliced cucumbers
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Season the diced chicken with salt and pepper.
- Dredge the chicken in flour, dip in beaten eggs, and coat with panko breadcrumbs.
- Place the chicken on a baking sheet and bake for 20-25 minutes until golden and cooked through.
- In a bowl, mix mayonnaise, sweet chili sauce, and sriracha to create the bang bang sauce.
- In serving bowls, layer mixed greens, shredded carrots, and sliced cucumbers.
- Top with baked chicken and drizzle with bang bang sauce.
- Garnish with chopped green onions and serve immediately.
