Description

A vibrant and flavorful dish featuring crispy chicken nuggets coated in panko, served over rice with fresh vegetables and a creamy, spicy bang bang sauce.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tbsp sriracha sauce
  • 2 cups cooked rice
  • 1 cup shredded lettuce
  • 1/2 cup sliced cucumbers
  • 1/2 cup shredded carrots
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Coat each piece in flour, then dip in beaten eggs, and finally coat in panko breadcrumbs.
  3. Heat oil in a frying pan over medium heat.
  4. Fry the chicken until golden brown and thoroughly cooked, about 5-7 minutes per side.
  5. Make the bang bang sauce by whisking together mayonnaise, sweet chili sauce, and sriracha until smooth.
  6. Assemble bowls with cooked rice, followed by lettuce, cucumbers, and carrots, topped with fried chicken and drizzled with sauce.
  7. Serve and enjoy the flavors and textures.

Notes

For a vegetarian option, substitute chicken with tofu. You can also air fry or bake the chicken for a healthier alternative.
