Description

A delightful Banana Upside Down Cake featuring caramelized bananas atop a fluffy, moist cake, perfect for any occasion.

Ingredients

Scale
  • 2/3 cup packed brown sugar
  • 4.5 tablespoons unsalted butter, cut into pieces
  • 3 bananas, sliced into 1/41/3 inch rounds
  • 1/3 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 ½ teaspoon vanilla extract
  • 1/3 cup plain Greek yogurt or sour cream
  • 2 large eggs
  • 2 overripe bananas, mashed (about 1 cup)
  • 1 cup all-purpose flour
  • ¾ cup whole wheat flour
  • 1 ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • Dash of salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup brown sugar
  • 1/4 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1/4 teaspoon salt

Instructions

  1. Preheat your Oven: Set it to 350°F (175°C) to warm up while you prep.
  2. Prepare the Pan: Grease an 8×8-inch square cake pan or a 9×2-inch round cake pan.
  3. Create the Caramel Layer: In the prepared pan, evenly spread the brown sugar followed by the pieces of butter. Allow the combination to melt slightly in the oven beforehand, making it easier to layer.
  4. Arrange the Bananas: Lay the sliced bananas over the butter-sugar mixture, ensuring an even distribution for that stunning top layer.
  5. Mix Your Dry Ingredients: In a mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, dash of salt, and cinnamon.
  6. Combine the Wet Ingredients: In a separate bowl, cream the softened butter and granulated sugar until light and fluffy. Then add in the eggs, vanilla extract, yogurt, and mashed bananas. Stir until well combined.
  7. Incorporate the Dry Ingredients: Gradually fold the flour mixture into the wet ingredients, mixing gently to combine.
  8. Pour the Batter: Carefully pour the cake batter over the bananas in the pan, ensuring even distribution.
  9. Bake the Cake: Bake initially for 30 minutes, then reduce the temperature to 325°F and continue baking for another 25-35 minutes or until a toothpick comes out clean.
  10. Cool and Invert: Allow the cake to cool for about 10 minutes in the pan before inverting it onto a serving plate.
  11. Make the Glaze: In a saucepan, combine 4 tablespoons of butter, 1/4 cup brown sugar, 1/4 cup heavy cream, and salt. Bring to a boil, then simmer for 2-3 minutes until slightly thickened.
  12. Glaze the Cake: Pour about two-thirds of the glaze over the cake, letting it soak in while reserving the remaining to drizzle over cake slices when serving.
  13. Optional Garnishes: Delight further with toppings such as toasted pecans, vanilla ice cream, or a dollop of whipped cream.

Notes

Make-ahead tips: Prepare the caramel layer and sliced bananas a day in advance. Bake in an air fryer for a quick option.
