Description

Deliciously fluffy cinnamon rolls infused with ripe bananas and crunchy toasted nuts, perfect for breakfast or any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 packet active dry yeast
  • 1/2 teaspoon salt
  • 1/4 cup milk
  • 1/4 cup water
  • 1/4 cup unsalted butter
  • 1 large egg
  • 1 ripe banana, mashed
  • 1 tablespoon cinnamon
  • 1/2 cup toasted nuts (walnuts or pecans)
  • 1/2 cup powdered sugar
  • 12 tablespoons milk (for glaze)

Instructions

  1. Warm the mixture: In a small saucepan, gently heat the milk, water, and butter until melted. Let it cool slightly until it’s warm but not hot to the touch, about 100°F (37°C).
  2. Mix & combine: In a large mixing bowl, combine the flour, sugar, yeast, and salt. Create a well in the center, then pour in the warm milk mixture, the egg, and the mashed banana. Using a sturdy wooden spoon, mix until a shaggy dough forms.
  3. Knead the dough: On a lightly floured surface, knead the dough for about 5-7 minutes until smooth, elastic, and slightly tacky.
  4. Let it rise: Grease a bowl and place the dough inside. Cover with cling film or a kitchen towel, then let it rise in a warm area until it doubles in size—about 1 hour.
  5. Preheat oven: As the dough rises, preheat your oven to 375°F (190°C).
  6. Roll out the dough: Once risen, punch it down gently and roll it out into a rectangle about 12×8 inches.
  7. Add the filling: Sprinkle the cinnamon, sugar, and toasted nuts evenly over the rolled-out dough.
  8. Shape the rolls: Starting from the longer side, roll the dough tightly into a log and slice into equal pieces, about 1 to 1.5 inches thick.
  9. Second rise: Place the rolls in a greased baking pan, cover, and let them rise for another 30 minutes.
  10. Bake the rolls: Bake for 20-25 minutes, or until golden brown.
  11. Glaze & serve: Mix together powdered sugar and milk for the glaze, drizzle over the warm rolls, and serve.
