Description
Deliciously fluffy cinnamon rolls infused with ripe bananas and crunchy toasted nuts, perfect for breakfast or any occasion.

- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 packet active dry yeast
- 1/2 teaspoon salt
- 1/4 cup milk
- 1/4 cup water
- 1/4 cup unsalted butter
- 1 large egg
- 1 ripe banana, mashed
- 1 tablespoon cinnamon
- 1/2 cup toasted nuts (walnuts or pecans)
- 1/2 cup powdered sugar
- 1–2 tablespoons milk (for glaze)
Instructions
- Warm the mixture: In a small saucepan, gently heat the milk, water, and butter until melted. Let it cool slightly until it’s warm but not hot to the touch, about 100°F (37°C).
- Mix & combine: In a large mixing bowl, combine the flour, sugar, yeast, and salt. Create a well in the center, then pour in the warm milk mixture, the egg, and the mashed banana. Using a sturdy wooden spoon, mix until a shaggy dough forms.
- Knead the dough: On a lightly floured surface, knead the dough for about 5-7 minutes until smooth, elastic, and slightly tacky.
- Let it rise: Grease a bowl and place the dough inside. Cover with cling film or a kitchen towel, then let it rise in a warm area until it doubles in size—about 1 hour.
- Preheat oven: As the dough rises, preheat your oven to 375°F (190°C).
- Roll out the dough: Once risen, punch it down gently and roll it out into a rectangle about 12×8 inches.
- Add the filling: Sprinkle the cinnamon, sugar, and toasted nuts evenly over the rolled-out dough.
- Shape the rolls: Starting from the longer side, roll the dough tightly into a log and slice into equal pieces, about 1 to 1.5 inches thick.
- Second rise: Place the rolls in a greased baking pan, cover, and let them rise for another 30 minutes.
- Bake the rolls: Bake for 20-25 minutes, or until golden brown.
- Glaze & serve: Mix together powdered sugar and milk for the glaze, drizzle over the warm rolls, and serve.
