Baked Spinach Mushroom Quesadillas that Delight and Nourish

Delicious and healthy baked quesadillas filled with spinach and mushrooms, perfect for a quick meal.


Ingredients

  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 whole wheat tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the mushrooms until soft.
  3. Add spinach and cook until wilted, then season with garlic powder, salt, and pepper.
  4. On half of each tortilla, layer the spinach and mushroom mixture and sprinkle cheese on top.
  5. Fold the tortillas in half and place them on a baking sheet.
  6. Bake for 15-20 minutes or until the tortillas are golden and crispy.
  7. Cut into wedges and serve warm.

Notes

  • Feel free to add other vegetables like bell peppers or onions.
  • Serve with salsa or guacamole for extra flavor.
  • These can be made ahead and frozen for later use.
