Ingredients

- 2 cups rolled oats
- 1 cup milk (or plant-based milk)
- 2 eggs
- 1/4 cup honey (or maple syrup)
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1 cup mixed fresh berries (such as blueberries, strawberries, raspberries)
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and grease your muffin tin well to ensure easy release.
- Combine the rolled oats, milk, eggs, honey, vanilla extract, baking powder, cinnamon, and a pinch of salt in a mixing bowl. Whisk until everything blends harmoniously.
- Fold in the mixed berries gently.
- Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes, until the edges are golden and centers have set firm but still moist.
- Allow to cool for a few minutes before gently removing them from the tin.
- Serve warm or store for a quick breakfast option throughout the week.
Notes
For a vegan version, substitute eggs with flax eggs or chia seeds mixed with water. Customize with nuts or different fruits as desired.
