Ingredients

  • 2 eggs
  • 1/4 cup honey (or maple syrup)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1 cup mixed fresh berries (such as blueberries, strawberries, raspberries)
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your muffin tin well to ensure easy release.
  2. Combine the rolled oats, milk, eggs, honey, vanilla extract, baking powder, cinnamon, and a pinch of salt in a mixing bowl. Whisk until everything blends harmoniously.
  3. Fold in the mixed berries gently.
  4. Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes, until the edges are golden and centers have set firm but still moist.
  6. Allow to cool for a few minutes before gently removing them from the tin.
